lasanga and pumpkin pie

her hair gets in her eyes b/c it's so long now. my mom always called it a whale spout but ez likes to say, "pig tails!". she's a fan of pig tails, thankfully.

The lasagna we made together last night while ez slept turned out to be delicious! it was full of fresh spinach, eggplant, chunky tomatoes and yummy sauce. we made ricotta from mixing an italian herbed tofu, soy mozzarella, nutritional yeast and a host of different italian herbs all in the food processor. a was in charge of this and his blending skills were just right. we soaked the eggplant in water yesterday afternoon and popped it in the oven while putting the rest of the lasagna together so it got nice ans soft. i usually sautée it but wasn't up for that business last night. i never cook my noodles beforehand but just keep it nice and moist so they cook in the oven. i add a little sauce to the bottom of the pan to prevent the noodles from sticking and help them cook. it always works well.

ez ate an entire bowl full of it, which amounted to about one portion! a and i each ate probably two or three portions like good lil piggie parents should. we had not tasted lasagna in over four months as vegan lasagna was never on the menu in any of our international dinners.

ez woke up as i was preparing the pumpkin pie so she helped with the mixing. then, she helped me pour it into the pie pan and licked the spatula like all good little girls should when they are learning the ways of the kitchen. good girl, ez. ruf.

the pie was yummy. we gave into the 7 taunting containers of organic soy ice cream that are in our freezer. vegan dulce de leche? uh, bring it!
